1. Add flavors during the dough preparation process.
Mix flavors directly with flour and other auxiliary materials. Almost all breads and biscuits are added with flavors at this stage. Since the flour needs to be baked at high temperature after forming, the high temperature resistance of the flavor must be considered when selecting flavors. Generally, oil-soluble or powdered flavors are selected.
2. Add flavors after baking.
After the biscuits are out of the oven, spray edible oil with flavors on their surface or sprinkle solid powder flavors on them. Generally, biscuits have to go through the oil spraying process after they are out of the oven, so the spray oil can be used as a carrier to dissolve the flavors in it and then spray them on the surface of the biscuits. If the upper and lower surfaces of the biscuits are sprayed with oil, the effect will be better. This oil spraying method that can avoid high-temperature baking is convenient for manufacturers. However, this method of adding flavors does not completely avoid heat loss. The surface temperature of freshly baked biscuits can reach 180°C and the center temperature is about 110°C. Therefore, first mix the flavors and spray oil thoroughly to keep the oil temperature at about 80-90°C. Powdered flavors can be used as reference for flavoring puffed foods. The powdered flavors are evenly sprinkled on the surface of the biscuits, and the baked biscuits are fed into the drum so that the flavors are evenly distributed on the surface of the biscuits.
3. Flavoring in the sandwich process.
This method is suitable for biscuit products such as wafer biscuits and sandwich biscuits that need to be sandwiched between biscuit slices. In the biscuit sandwich layer, flavors are evenly mixed to flavor the biscuits. Generally, the sandwich fillings of biscuits are mostly sugar, oil, dairy products, jam, maltose, etc., so flavors can be mixed with these ingredients, and then the sandwich fillings can be fixed between the biscuit units through a sandwich machine or manual processing. This flavoring process is relatively simple, and the requirements for flavors are not very high. Generally, water-oil dual-purpose flavors can meet the requirements.
In short, when adding flavor to baked goods, it is necessary to add targeted flavors to products of different flavors based on the age group and taste preferences of consumers; when selecting and applying edible flavors, it is necessary to understand their own physical and chemical properties, and pay attention to the consistency of the taste of the flavors with the entire product formula; the amount of flavors consumed must be strictly controlled to avoid using too little so that the flavor is not prominent, and using too much which will bring unpleasant odors to the product. Using a moderate amount can make the product fragrant and leave consumers with an endless aftertaste.
